So, it’s FINALLY getting hot in New England. Finally, at the end of May! I’m originally from Tennessee, and it’s been hot there for the last month and a half. Lucky them (I LOVE hot weather!).
Since it’s finally feeling like summer outside, I decided to get a watermelon from the market this week. I saw the cutest, smallest, personal sized watermelons. I’ve never seen them before. They were so cute OBVIOUSLY I had to get one!
I was about to eat it plain, then I realized I could make something different from it! I’ve aways seen those pretty watermelon salads on Pinterest, and recently watched an episode on Bon Appetit’s Back to Back (where a “regular” person (in this episode, Natalie Portman) and a chef make something, but they can’t see what each other are doing until the end. The chef gives instructions and the other person blindly follows. It’s pretty entertaining. 🙂
Anyway, on this particular episode they were making a salad with watermelon, coconut, basil, and a few other ingredients that have escaped my mind. As I sliced into the watermelon, I thought it would be nice to learn how to make a salad out of watermelon. I’ve never done this before, so I had no idea how it would taste (spoiler alert: amazing!).
This recipe, even though it looks pretty, could not have been easier.
How it’s made
Watermelon– I started with a small, personal sized watermelon. Obviously you can use any size of watermelon you wish, but if you are making this for one or two people, this one is the perfect size. I used a watermelon baller to make them into perfectly shaped, bite sized balls.
Cucumber– You can use any kind of cucumber you want, but I particularly love English cucumbers. Persian cucumbers also work great because they are small.
Feta– This is where the magic begins. Feta cheese is the perfect salty contrast to the sweetness of the watermelon, and the coolness of the cucumber. It also gives it a slight twang.
Mint– Another bit of magic. The mint adds refreshment to the coolness of the cucumber and the sweetness of the watermelon. Fresh mint leaves are amazing no matter what.

Ingredients
- 1 Watermelon I used a small, personal sized watermelon
- 1/2 English Cucumber Chopped
- 1/2 cup Feta Cheese Can use more or less
- 1/4 cup Mint Leaves Fresh, roughly chopped

- Put everything into a bowl, toss, and enjoy!
