Whisk the chickpea flour, water, half of the olive oil, and salt together in a medium sized mixing bowl.
Let sit for 30 minutes.
Preheat the oven to 475°F.
Place the empty cast iron skillet into the oven and let heat for 5-10 minutes.
Take the hot cast iron skillet from the oven, grease the bottom with the remaining oil.
If you are using any add-ins, stir them into the batter now, otherwise, pour batter in and bake for 7-10 minutes, until the top is slightly cracked and the edges are brown.
