Mainly known as French street food, socca bread can commonly be found in the Nice region of Southern France.

This bread recipe is probably the quickest, easiest bread that you’ll ever make! Only 4 ingredients and no knead makes it easy and quick to make last minute!

You can eat it plain or mix additional ingredients into the batter before baking for extra flavor. This bread is super healthy and a very good addition to breakfast, lunch, or dinner!

What’s Inside?

  • Chickpea flour
  • Olive Oil
  • Salt
  • Water

Additional add-ins and serving suggestions can include-

  • Rosemary and Nutritional Yeast (for a slightly cheesy flavor)
  • Cinnamon and Sugar
  • Parmesan Cheese
  • Red Pepper Flakes
  • Drizzle with Olive Oil
  • Top with an Egg!
  • Serve with warm Chili
  • Serve inside of a salad in place of croutons
  • Use as a pizza crust
  • Use as a flatbread base for any number of ingredients!

How to make Socca Bread:

  • In a medium bowl, whisk the water, salt, some of the oil, and the chickpea flour together.
  • Let the batter sit for 30 minutes.
  • Heat the oven up to 475F.
  • Place a cast iron skillet (or any other kind of oven safe baking pan) in the oven and let heat for 5-10 minutes.
  • After batter has sat for 30 minutes, take the skillet out of the oven and oil the bottom with remaining olive oil.
  • If using any of the add-ins stir them into the batter now.
  • Pour batter into skillet and place in oven for 7-10 minutes.
  • When the top part is cracked and the edges are brown, remove from oven, let cool and enjoy!

Ingredients

Scale
  • 1 cup Chickpea Flour
  • 1 cup Water
  • 2 tbsp Olive Oil
  • 1/2 tsp Salt

Instructions

  • Whisk the chickpea flour, water, half of the olive oil, and salt together in a medium sized mixing bowl.
  • Let sit for 30 minutes.
  • Preheat the oven to 475°F.
  • Place the empty cast iron skillet into the oven and let heat for 5-10 minutes.
  • Take the hot cast iron skillet from the oven, grease the bottom with the remaining oil.
  • If you are using any add-ins, stir them into the batter now, otherwise, pour batter in and bake for 7-10 minutes, until the top is slightly cracked and the edges are brown.
  • Let cool, cut into 6-8 pieces.
  • Enjoy!
