Smoked Cheddar Tofu Sandwich

There was a local restaurant back home in Tennessee that I used to LOVE to eat at. They had this smoked cheddar tofu sandwich that was one of the best sandwiches that I had ever had. After I moved away I really missed eating there. So I decided to make a version of my own.

The smoked cheddar is what does it in this recipe. A few years ago when I first tried to make this sandwich from memory I tried it with regular cheddar and it just wasn’t the same. The flavor between the roasted onions and the smoked cheddar is everything.

Unfortunately this recipe is a little labor intensive for one sandwich, so I suggest making enough roasted onion and tofu to make a few quick sandwiches throughout the week, or to be used in different dishes.

What’s Inside?

  • Smoked Cheddar– As I said above, regular cheddar just isn’t the same. Smoked cheddar brings the flavor to a different level.
  • Roasted Onion– The combination of smoked cheddar and roasted onion is amazing.
  • Tofu– Can cook however you want. You can bake it or sautee it in a skillet (which is the method I use).
  • Bread of choice– When I eat this I use Ezekiel Bread, but for the pictures I use a (photogenic) ciabatta roll.
  • Fresh Spinach
  • Freshly Sliced Tomato
  • Mustard

How to make Smoked Cheddar Tofu Sandwich

  • First off, roast the onions. This takes the longest, so it’s best done first.
  • Secondly, make the tofu. I sautee/fry mine in a skillet which takes about 5-10 minutes. Baking takes a little longer.
  • To assemble the sandwich spread the mustard on the bread, put tofu on bottom piece of bread, then the tomato, then the cheese.
  • Put the unfinished sandwich on a baking sheet and put in a preheated oven (I heat it to 400F) and let the cheese melt.
  • After the cheese has melted, take it out of the oven and put the spinach on top.
  • Place the top piece of bread on.
  • Enjoy!

Ingredients

Scale
  • 1 Yellow Onion Cut into cresants
  • 2 Small Squares of Tofu
  • 1 Tomato Slice
  • 1 Slice of Smoked Cheddar Cheese
  • Spinach
  • 1 Ciabitta Bun
  • Mustard

Instructions

Roasted Onion

  1. Get 1 medium yellow onion and cut it into crescents.
  2. On a baking sheet drizzle olive oil onto the onion and salt and pepper.
  3. Place in a preheated oven (400F) for 30 minutes, or until caramalized.

Tofu

  1. Get a block of tofu and cut out 2 small (maybe around 2″x1″) squares of tofu.
  2. Place in a hot skillet and cook for roughly 2.5 minutes per side.

Assembling

  1. Get the ciabatta roll and cut in half. Put desired amount of mustard on.
  2. Place the cooked tofu on bottom.
  3. Put the sliced tomato on top of the tofu.
  4. Next put the roasted onion on top of tomato.
  5. Then put 1 slice of smoked cheddar cheese on top.
  6. Put into oven (still heated at 400F from roasting the onions) until cheese has started to melt.

Finish Assembling

  1. Put the spinach on top and the top part of bread on.
  2. Enjoy!
