I love beets. Beets have always been one of my favorite foods. I used to eat pickled beets when I was little at my grandmother’s house. I love the sweet, earthy flavor.

Not only do they taste great, they are extremely good for you too! Don’t you just love food that not only tastes good but also has huge health benefits?

What’s Inside Pink Beet Pasta?

  • Pasta of choice, I used spaghetti
  • Beets
  • Feta Cheese
  • Cashews
  • Garlic
  • Olive Oil
  • Lemon Juice
  • Salt
  • Pepper

How to Make Pink Beet Pasta:

  • Cook pasta according to package’s instructions.
  • While the pasta is cooking, also cook the beet- trim the greens, top and bottom off, wash, then cut into quarters and place in boiling water and boil until tender, which is roughly 45 minutes (a good way to know when they’re done is when you can stick a fork into the beet and it gives little to no resistance).
  • Set the beets aside and let them cool completely before putting them in blender, especially if you are using a blender without any kind of vent (like a nutribullet). When beets have cooled off, place all of the sauce ingredients into blender and blend, on high, until completely smooth.
  • Pour sauce over pasta, stir, and enjoy!

Ingredients

  • 12 oz Pasta of choice (I used spaghetti)
  • 2 small Beets
  • 3/4 cup Feta Cheese, crumbled
  • 1 clove Garlic
  • 1/2 cup Raw Cashews
  • 2 tbsp Lemon Juice
  • 1.5 tbsp Olive Oil
  • 3/4 cup Water
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  1. Cook pasta according to package instructions
  2. Chop the greens off the beets, and wash.
  3. Chop the beets into quarters (4 pieces) and put into boiling water and boil until tender, roughly 45 minutes.
  4. After beets have cooked and cooled off, put them and the remaining ingredients into a blender and blend until smooth.
  5. Pour the sauce over the pasta, stir, and enjoy!
