This recipe also works GREAT as an add in for other recipes. Try topping things like tacos, burritos, use alone as a salsa, or put on top of freshly prepared nachos! This goes great with almost anything!

Ingredients

Units Scale
  • 1 cup of Peaches, diced
  • 3/4 cup of Tomatoes, diced
  • 1/2 cup of Red Onion, diced
  • 1 Jalapeno, diced
  • 2 cloves Garlic, minced
  • 1/2 cup Bell Pepper, diced
  • 1/4 cup Cilantro, chopped
  • 1 tbsp Olive Oil
  • Juice of 2 small Limes (see note)
  • Salt
  • Pepper

Instructions

  1. Dice the peaches, tomato, red onion, and jalapeño.
  2. Chop the cilantro.
  3. Mince the garlic.
  4. Juice the lime.
  5. In a mixing bowl, mix all of the ingredients together.
  6. Serve as is or use as a mix-in for other recipes!
  7. Enjoy!

Notes

I had VERY small limes and they didn’t have much juice. You may want to juice 1, taste it, and if needed use a second if your limes are any larger.
