Ingredients
- 1 cup of Peaches, diced
- 3/4 cup of Tomatoes, diced
- 1/2 cup of Red Onion, diced
- 1 Jalapeno, diced
- 2 cloves Garlic, minced
- 1/2 cup Bell Pepper, diced
- 1/4 cup Cilantro, chopped
- 1 tbsp Olive Oil
- Juice of 2 small Limes (see note)
- Salt
- Pepper
Instructions
- Dice the peaches, tomato, red onion, and jalapeño.
- Chop the cilantro.
- Mince the garlic.
- Juice the lime.
- In a mixing bowl, mix all of the ingredients together.
- Serve as is or use as a mix-in for other recipes!

Notes
I had VERY small limes and they didn’t have much juice. You may want to juice 1, taste it, and if needed use a second if your limes are any larger.
