Mediterranean pasta salad is definitely one of my favorite pasta salads! So easy and quick to make!
It’s definitely perfect for summer BBQ’s, picnics, or just eating on the patio. The lemon juice lightens this pasta dish up so this pasta is definitely lighter and not as heavy as “regular” pasta, making it the perfect dish for hot weather.
What’s Inside Mediterranean Pasta Salad?
- Pasta– I used a Gluten Free Rotini, but any will work
- Cucumbers
- Tomatoes
- Red Onions
- Black Olives
- Feta
- Italian Parsley
- Olive Oil
- Lemon Juice
- Salt
- Pepper
- Red Pepper Flakes
- Oregano
- Thyme
- Red Wine Vinegar
How to Make:
- Cook pasta according to package instructions
- After pasta has finished cooking, drain, toss with some olive oil (so it won’t stick) and place in refrigerator to cool.
- While pasta is cooling, chop up all of the veggies.
- Place all dressing ingredients in a jar and shake.
- Place pasta, all of the veggies in a large bowl, top with the dressing and toss
- Enjoy!

A nice, cool, flavorful pasta salad perfect for summer!
Ingredients
For Salad-
- 1 box of Rotini Pasta- I used gluten free, 8oz.
- 2 medium sized Tomatoes, diced
- 2 Cucumbers, diced
- 1 Red Onion, diced
- 1 cup Black Olives, roughly chopped
- 1 head of Italian Parsley, finely chopped
- 6 oz package of Feta Cheese, crumbled
For Dressing-
- 1/2 cup Olive Oil
- 3 oz Red Wine Vinegar
- Juice of 1 Lemon
- 4 tsp Oregano
- 2 tsp Thyme
- 1/2 tsp Red Pepper Flakes
- 1/2 tsp Salt
- 1/2 tsp Black Pepper
Instructions
- Cook pasta according to package’s instructions.
- While pasta is cooking, dice the red onion, cucumbers, and tomatoes.
- Roughly chop the black olives (if you aren’t using pre-sliced).
- Finely chop the Italian Parsley.
- After pasta is finished cooking, toss some olive oil into it, and place it in refrigerator until chilled.
For Dressing (see note)-
- Place all of the dressing ingredients into a jar, place lid on, and shake!
Assembly-
- Place all of the ingredients into a large bowl
- Top with dressing
- Toss
- Enjoy!
Notes
If you don’t like so much dressing, halve the recipe. I tend to like a lot of dressing, so I ended up doubling my original recipe. You can always make the whole recipe and save what you don’t use for future meals!
