This Lebanese Tomato Cucumber Salad is a salad I had almost every day while visiting Lebanon. It’s the perfect fresh Mediterranean style salad.
Lebanese food…OMG. I am obsessed. When I visited Lebanon in 2016 I completely fell in love with the food. I was very excited to eat at local restaurants, but my mother-in-law insisted on making all of our meals for us. I literally ate 2 meals 3 times a day for a month while there!! (I’m not kidding). My mother-in-law is an amazing cook who makes amazing food so I would eat as much as I could at her house only to go out and eat again at all of the amazing local restaurants. I was in foodie heaven while there!!
I love learning how to make all of the different kinds of food I had while there. This one was a salad she would make almost everyday. It’s so simple, but it tastes so good. The secret is using lots of fresh mint leaves and freshly squeezed lemon juice. Everything should be made while in season, everything should be fresh. That’s the key to having a salad that has amazing flavor to it.
The cucumbers are known as Persian cucumbers. They are a lot smaller than what we think of as cucumbers here in America. Since they are local to the area, they taste a LOT better in that area as compared to the ones we have here. You can find them in grocery stores here using the name “mini” or “baby” cucumbers. If you have the chance get them at a middle eastern grocery store, those tend to taste better!

What’s Inside Lebanese Tomato Cucumber Salad?
- Tomatoes
- Cucumbers
- White Onion
- Fresh Mint Leaves
- Lemon Juice
- Olive Oil
- Crushed Dried Mint
- Salt
How to Make:
- Slice the tomatoes into wedges.
- Slice the cucumbers any way you’d like.
- Slice the onions into crescent shapes.
- Roughly chop the mint leaves.
- Toss these ingredients in a large bowl.
- In a separate jar or container, add the lemon juice, olive oil, crushed dried mint, and salt.
- Put a lid on the jar/container and shake until blended.
- Pour dressing over salad.
- Let chill in refrigerator.
- Serve and enjoy!

Ingredients
- 2 large Tomatoes, sliced into wedges
- 6–8 Persian Cucumbers, chopped
- 1/2 White Onion, cut into crescents
- 15–20 Fresh Mint Leaves, roughly chopped
- 1/4 cup Olive Oil
- 2–3 tbsp Lemon Juice
- 1 tsp Crushed Dried Mint
- Salt, to taste
Instructions
- Slice the tomatoes into wedges.
- Chop up the cucumbers.
- Slice the onion into crescent shape cuts.
- Roughly chop the fresh mint leaves.
- Toss all of those ingredients together in a large bowl.
- In a separate jar or container with a lid, put the olive oil, lemon juice, crushed dried mint, and salt. Put the lid on and shake until combined.
- Pour the dressing over the salad and toss until everything is evenly coated.
- Put in refrigerator until chilled.
- Serve and enjoy!
