So I spent the last few years in a small town with no good restaurants to eat at. The only places to eat were the usual fast food restaurants one would find next to the interstate. McDonald’s, Wendy’s, etc…you get the idea.
When I moved out of there, I couldn’t wait to find good, healthy restaurants to eat at. I very quickly stumbled upon this little vegetarian restaurant in my new town. I’ve since then eaten there several times, but I’ve only ever had one thing. It’s so good that I haven’t been able to branch out and try anything else!
It wasn’t long until I decided to try to make it on my own. I changed around a few things, but the result wasn’t bad at all!
It’s a healthier, vegetarian version of Mexican pizza, using fresh ingredients.
What’s inside?
- Pizza Dough– The first ingredient to work with would obviously be pizza dough! I have my own recipe here, which is gluten free. It’s very easy to make and tastes great!
- Mozzarella– Since there is no sauce in this recipe, this is the base of the pizza. Be sure to add plenty!
- Feta Cheese– This is it. Feta cheese gives this pizza a unique flavor that is amazing. Since I LOVE the salty, tangy flavor it gives the pizza, I usually put a TON of it on. Obviously you can add as much or as little as you would like.
- Black Beans– Nothing to say here but “yum!” 😉
- Fire Roasted Corn– I was going to use regular frozen corn, but when I opened the freezer I discovered that I only had fire roasted corn. So I decided to give it a try. It did not disappoint.
- Mango– Honestly, I don’t overly care for mango. But the right amount sprinkled on top of this pizza combats the tangy saltiness of the feta cheese and gives it a fuller taste.
- Fresh Cilantro– Add a handful of fresh, chopped cilantro after it’s done baking to bring the whole pizza together.
To Make:
To make, get 1 ball of pizza dough (find my recipe here), prepare it, and cut it into quarters.
Store 3 of the quarters (or however many are not going to be used) in individually wrapped plastic wrap and keep in refrigerator for a few days (or freeze up to a month).
After rolling dough into a circular shape and brushing with oil, put toppings on starting with the cheeses. I usually just place toppings on according to taste, I never use precise measurements.
Sprinkle cheeses, then onion, beans, mango, and corn.
Place in preheated oven (425 F) and bake for 15-20 minutes.
Add fresh cilantro on top and enjoy!

Healthy Mexican Pizza
A healthier, vegetarian take on mexican pizza
Ingredients
- 1 ball Pizza Dough
- Mozzarella Cheese Shredded
- Feta Cheese Crumbled
- Black Beans Rinsed and Drained
- Mango Diced
- Fire Roasted Corn Frozen
- Red Onion Thinly Sliced
- Olive Oil
- Cilantro Fresh, chopped
Instructions
- Preheat oven to 425°F
- Prepare pizza dough following the instructions here.
- Once dough has been shaped and brushed with oil, sprinkle mozzarella and feta cheese (to taste) on top.
- Place onions evenly across surface.
- Sprinkle beans, corn, and mango on top.
- Place in preheated oven at 425°F and bake for 15-20 minutes.
- Let cool, and enjoy!
Notes
I didn’t put any precise measurements on the toppings because I don’t use them. I always add everything to taste, and since pizza is very personal, feel free to add as much or as little of any certain topping you’d like!
