Mix together the flour, baking powder, baking soda, and salt. Set aside.
In a large mixing bowl place the butter, white sugar and brown sugar.
Using either a stand mixer or a hand mixer cream the butter and sugars together on low speed for 3 minutes.
Stop the mixer and scrape the sides of the bowl.
Add in the egg and vanilla extract.
Continue to cream/mix together for 7 more minutes (this is key!).
The resulting mixture should be light and fluffy.
Add in the dry ingredients that were mixed earlier and on low/stir speed, mix together until just combined, usually no more than 30 seconds.
After the dough has come together, using a rubber spatula fold in the chocolate chips.
Using a cookie scoop, scoop out the dough onto a greased baking sheet, placing no less than 1 inch apart to allow for the cookies to expand as they’re baking.
Bake for 8-10 minutes.
Take the cookies out of the oven, even if they don’t look completely finished yet, and let them rest on the baking sheet for 2 additional minutes.
