These chocolate rice cakes are a WAY healthier take on the classic peanut butter cup. They are like a grown-up, healthier upgrade which kids and adults alike are sure to love!
Peanut butter cups are probably my candy of choice. There’s something about the peanut butter/chocolate combo that I love. I rarely eat candy these days. Plain chocolate sometimes, but definitely not an actual reeses peanut butter cup.
Well, this is a healthier, more grown-up version of a peanut butter cup. I’m all about upgrading “junk” food, or food with not the best of ingredients into healthier versions of themselves. These are so good I could eat 10 of them at once. Maybe not, but I can try, right? š
I decided to use a smaller, square rice cake instead of the thicker round ones. In my opinion this causes less crumbling and they are easier to hold and eat. I also used almond butter instead of peanut butter, but you can definitely use any kind of nut butter that works for you. Also, the chocolate I used was a semi-sweet chocolate chip that I melted, but any kind of chocolate from milk to dark can be used. For the topping I used hemp seeds but again, you can top it with anything you’d like! The possibilities are truly limitless! š

How to Make:
- Lay out the desired amount of rice cakes on a large plate or baking sheet (something that will easily fit into your freezer).
- Melt the chocolate in the microwave in 30 second intervals.
- Spread nut butter of choice on rice cakes.
- Pour the chocolate over the rice cakes.
- Place any desired toppings onto the melted chocolate.
- Place in freezer and freeze until chocolate has set.
- Serve and enjoy!

- Rice Cakes
- Semi Sweet Chocolate Chips
- Nut Butter of choice
- Hemp Seeds
Instructions
- Lay out the desired amount of rice cakes either on a large plate, baking sheet, or cooling rack.
- Spread nut butter onto the tops of the rice cakes.
- Place desired amount of chocolate into a microwave proof bowl and in 30 second increments melt until smooth.
- Spread desired amount of chocolate on top of the nut butter on the rice cakes.
- I topped mine with a sprinkle of hemp seeds, but you can use any topping you would like!
- Place them in the freezer and freeze until the chocolate has set.
- Serve and enjoy!
